Potato Bhaji is comfort food, goes really well with puris or chapatis or parathas. This potato bhaji is prepared slightly different than the usual way. Here I have added cashewnut and onion paste along with tomatoes. This recipe gives it a lovely rich tasty flavour than the simple stir fry one.
INGREDIENTS 400 gms potatoes (chopped roughly) 200 gms tomatoes. (puree the tomatoes and keep aside) 2 onions (total weight100 gms) made into paste. 10 cashewnuts made into paste. 1 tsp chilli powder or according to taste 1/2 tsp pepper powder 1/2 tsp chaat masala 1/2 tsp garam masala powder 2 tbsp kasuri methi 1/4 tsp turmeric powder 1 tsp ginger garlic paste
METHOD Parboil the potatoes (boil potatoes for 2 mins). Drain out the water. Allow to cool Dust with rice flour and sprinkle with salt. Shallow fry the potatoes till done. Keep aside. To a pan heat up some ghee. When hot add the onion paste and stir fry till light brown. Mix in the cashewnut paste and stir fry well. Then add the tomato puree and little water. Allow to cook for a minute. Add in now ginger garlic paste and the powder masalas mentioned above. Allow to cook for a minute. Add now the potatoes and kasuri methi. Salt to taste accordingly. Cook for 2 to 3 minutes.
