Potato and French Beans Salad
A simple, delicious salad with crispy potatoes, tender French beans, and a tangy mustard dressing. Perfect as a side dish for grilled meats, roasts, or even as a light meal on its own.
Ingredients
For the Salad
1 kg potatoes, peeled and cut into chunks
250 grams French beans, washed, trimmed, and cut into bite-sized pieces
Minimal oil for cooking
Salt to taste
Chilli flakes (optional)
For the Dressing
2 tbsp mustard sauce
1 tbsp apple cider vinegar
1 tbsp olive oil
A sprinkle of chilli flakes
A sprinkle of pepper powder
Method
Prepare the Potatoes
Parboil the potatoes until just tender.
Drain well and allow them to cool slightly.
Heat a pan with a minimal amount of oil and sprinkle in a little salt.
Add the potatoes and fry gently, turning occasionally, until lightly golden and cooked through.
Remove and set aside.
Prepare the French Beans
Wash, trim, and drain the French beans well.
Lightly brush a pan with oil and heat it.
Add the French beans and sauté lightly until just tender while still retaining a slight crunch.
Remove and set aside.
Prepare the Dressing
In a small bowl, combine:
Mustard sauce
Apple cider vinegar
Olive oil
Chilli flakes
Pepper powder
Mix well until combined.
Assemble the Salad
Just before serving, combine the potatoes and French beans in a large bowl.
Season generously with salt and add a sprinkle of chilli flakes if desired.
Pour over the prepared dressing.
Toss gently until everything is evenly coated.
Serve immediately while the potatoes are still warm, or chill and serve cold. This salad pairs beautifully with grilled chicken, fish, or roasted meats.
