Pork Curry with Red Masala | Simple Homemade Pork Curry Recipe

A rich and flavourful pork curry made with a freshly ground red masala. The slow cooking allows the spices to blend beautifully with the pork, creating a delicious curry that tastes even better the next day. Serve it with traditional East Indian chitaps, bread, Pulao or steamed rice.

Ingredients
For the Pork
1.5 kg pork, cut into pieces
Salt to taste
2 tbsp vinegar
For the Red Masala
12 dried Kashmiri chillies
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp peppercorns
1 tsp fennel seeds
¼ tsp turmeric powder
1 tbsp vinegar
1 tbsp ginger-garlic paste
1 small ball tamarind
1 small onion, sliced
1 cup hot water
For the Curry
2–3 tbsp oil
1 inch ginger, thinly sliced
4 medium onions, sliced
5–6 green chillies, slit
Water as required
Method
Step 1: Prepare the Red Masala
Combine the dried Kashmiri chillies, coriander seeds, cumin seeds, peppercorns, fennel seeds, turmeric powder, vinegar, ginger-garlic paste, tamarind and hot water in a bowl.
Soak for 30–45 minutes.
Grind everything to a smooth paste along with 1 sliced onion and set aside.
Step 2: Prepare the Pork
Clean and wash the pork thoroughly.
Rub with salt and vinegar and leave aside for 30 minutes.
Wash again, drain well, and pat dry.
Add 2–3 tablespoons of the prepared red masala to the pork and mix well.
Allow the pork to marinate while you prepare the curry base.
Step 3: Cook the Curry
Heat oil in a large heavy-bottomed vessel.
Add the sliced ginger and sauté for about a minute.
Add the sliced onions and cook until lightly browned.
Add the marinated pork pieces and sauté for 2–3 minutes.
Add the remaining red masala paste and mix well.
Pour in just enough water to cover the meat and bring to a boil.
Reduce the heat to medium and cook until the pork is almost tender, stirring occasionally.
Adjust the seasoning if required.
Add the slit green chillies and continue cooking until the pork is tender and the gravy has thickened to your liking.

Tips
This curry tastes even better the next day as the flavours deepen overnight.
Adjust the number of green chillies according to your preferred spice level.
For a thicker gravy, allow the curry to simmer uncovered during the final stages of cooking.
Best enjoyed the next day with freshly made chitaps for an authentic East Indian meal.
