A very simple Pork curry with basic red masala , very much inspired by the Mangalorean Pork baffat . The ground masala along with the cut masala of green chillies , onions , ginger and garlilc are mixed well with the Pork pieces and cooked without any addition of oil.
This curry taste really good with some Neer Dosa. Neer dosa are rice crepes . For these crepes , the rice is soaked for couple of hours and then ground just with enough water or with just enough water and little bit of coconut.
Ingredients
10 Kashmiri chillies 1 tbsp coriander seeds 1 tsp cumin 1 tsp pepper corns 1 /4 tsp turmeric 4 cardamom 6cloves 1 bay 1 inch cinnamon 1/4 cup vinegar Grind the above with little amount of water to a paste
Cut masala 25 gms garlic julienne 14 gms ginger julienne 3 big onions sliced
Method
1 kilo boneless and skinless pork Add turmeric , salt and little vinegar to the pork , keep aside for 20 minutes. Wash well and pat dry.
To the pork add the ground paste and the cut masala and little amount of water. Cook on high till it comes to a boil. When almost done cooking on low flame .Adjust seasoning. Then on low gas continue to cook till done. Add salt if needed only .
For Neer Dosa Ingredients 2 1/2 cups rice (broken basmati rice) Soak rice for 2 to 4 hrs. 2 tbsp desiccated coconut
Method
Grind the rice and desiccated coconut together with enough water . Grind till nice and smooth batter texture
Add enough water for a runny batter. No salt required. If desired add salt.
Brush a nonstick pan with oil. Pour some amount of batter well. Cover with lid. Remove when done. The pan should be nice and hot.
