Pasta with Aubergine

A quick Simple Friday Lunch

Aubergine tossed in a tomato base sauce with Elbow Pasta and sprinkled generously with powder parmesan


300 gms aubergine

Marinate the chopped aubergine with

1 tsp chilli powder

1/4 tsp Pepper powder

1/4 tsp cumin powder

1/2 tsp garlic ginger powder

Salt to taste


Add some olive oil to the pan, a tbsp of butter.

Shallow fry the marinated chopped Aubergine till almost done.


1 tbsp butter

2 tbsp olive oil

2 green chillies

4 tomatoes chopped and pureed

2 tomatoes finely chopped

4 cloves garlic mashed

2 tbsp dry pasta mix ( easily available in stores)

160 gms elbow pasta

1/4 finely chopped coriander leaves

1/4 tsp chilli powder or according to taste

2 to 3 tbsp powder parmesan or an alternative to parmesan use any processed cheese or pizza cheese


Add the Olive oil and butter to the pan , one slightly hot add the mashed garlic and fry till lightly browned.

Add the finely chopped green chillies and tomatoes a little bit of salt. Saute till tomatoes are soft.

Mix in the tomato puree, dry pasta mix and 1/2 cup water.

Add in the chilli powder and allow to cook for 2 mins on low flame.

Now add the fried aubergine mix well. Cook for 2 mins.

Lastly add the finely chopped coriander leaves, salt if required , few green olives , the elbow pasta and mix well.

After A minute switch gas off add the powder parmesan cheese and mix well.


If using processed cheese or pizza cheese add the cheese along with olives and microwave it for minute or till cheese melts.
