Sunday lunch
Green Masala Mutton curry
Mutton Curry served alongside Coconut Rice (Pulao) and Butter Garlic potatoes. A delightful Sunday Meal
For the mutton
Ingredients
500 grams mutton
Clean wash the mutton well.
I always add a tablespoon of wheat flour or gram flour, a teaspoon of turmeric powder, and 2 teaspoon vinegar and keep for 20 minutes.
Then I wash it off well and keep aside
For the curry paste
Ingredients 1
80 grams of spring onion
6 green chillies
1 tablespoon of ginger garlic paste
Grind this to a paste with just enough water and keep aside
Ingredients 2
1 teaspoon cumin seeds
1 teaspoon pepper corn
1/2 teaspoon of fennel seeds
1 inch cinnamon stick
4 cloves
Dry grind the above mentioned ingredients and keep aside.
Ingredients for the curry
2 medium onions sliced
2 medium size tomatoes finely chopped

Heat up some oil in a pressure cooker. Once hot, add the finely chopped onions and sauté until they turn lightly brown.

Add the tomatoes and cook till soft and done. Add the dry ground spices and 1/2 cup water and stir fry. Add in the ground paste and another 1/2 cup water. Allow to cook for a minute.

Add the mutton pieces , salt according to taste, mix well and cook for a minute. Pressure cook on high, after the first whistle lower the flame and cook for 10 to 15 minutes.
For the Coconut Rice
Ingredients
2 and 1/2 cup basmati rice
200 ml coconut milk ( I used dabur coconut milk)
10 curry leaves
2 tablespoons clarified butter
1 stock cube
Hot water
1/4 cup finely chopped coriander leaves
Method

Heat up some clarified butter in a pan, once hot add the curry leaves. Once it starts to splutter, add the rice , crumbled stock cube and stir fry for at least a minute.

Add the 200 ml coconut milk, mix well on low flame. Now on medium flame, add the hot warm ,1/2 inch above the rice. Mix well , once it comes to a boil ,lower the flame and cook till done.
For butter garlic potatoes
Ingredients
6 potatoes
6 to 8 cloves garlic minced
2 green chillies or according to taste
1/4 teaspoon of pepper powder or according to taste
Salt to taste
1/4 teaspoon of dry mixed herbs
1 tablespoon of finely chopped coriander leaves
Method
Boil the potatoes till half done, drain and keep aside. Heat up a pan with some butter and oil.
Add the finely minced garlic and stir fry for a minute on medium flame. Add the potatoes, green chillies, salt, pepper powder. Mix well.
Finally add 1/4 teaspoon of dry mixed herbs and finely chopped coriander leaves.
