Mutton Curry,Pea Pulao and Raita
Mutton Curry prepared with Green masala and Biryani masala powder.
Mutton Curry
Ingredients
1 kilo 200 gms mutton
Wash mutton well. Add 2 tbsp gram flour, salt and 1 tbsp vinegar. Keep for half an hour.
Wash off well .
For the green masala
Grind together the mentioned below ingredients with just enough water.
100 gms coriander leaves with stem
5 to 6 green chillies
1 Onion sliced
1 tbsp ginger garlic paste
Ingredients for the spice powder
1 tbsp coriander powder
1 tsp cumin powder
1 tsp pepper corn
1/4 tsp turmeric powder
1 tsp chilli powder
1 tbsp biryani masala powder ( I have used Shaan Biryani masala powder)
Ingredients for sauteing
3 onions medium size finely chopped
3 tomatoes finely chopped
Ingredients
2 big size potatoes chopped
1/2 cup finely chopped coriander leaves
1 tsp apple cider vinegar
Salt to taste
Method
Add oil ,saute finely chopped onions till lightly brown. Add finely chopped tomatoes ,1 tsp salt and cook till soft. Once the tomatoes are soft and done add the spice powder, green masala and biryani masala powder .Add 1 cup water, allow to cook for a minute.
Add the mutton pieces , just enough water .
Pressure cook on high for 1 whistle ,then low for 15 minutes / 20 minutes or depending on the mutton. Add chopped potatoes and finely chopped coriander leaves.
Pressure cook for 1 whistle on high. Add salt only if required. Add 1 tsp apple cider vinegar or any other white vinegar
For the pulao
Ingredients
300 gms Basmati rice (approximately 3 cups)
3 onion sliced and browned
( Shallow fry the sliced onions with oil and salt )
100 gms green peas
1 Stock cube
Hot water
Method
Add 2 tbsp clarified butter . Add the green peas and rice. Stir fry gently.Add the crushed stock cube. Add hot water , 1 inch above the rice. Add some of the brown onions. Once it starts to boil. Lower the flame ,cover and cook till done.
Lastly add the fried brown onions.
Raita
Ingredients
400 gms curd
Whisked
2 tsp khatti mithi chutney { sweet,sour chutney/}
1 tsp chaat masala
Salt to taste
1 tsp chilli powder
1/4 cup finely chopped coriander leaves
1/2 cup kara masala boondi
Mix all this well.
