Mutton Curry

A simple and quick mutton curry prepared with a rich red masala.
Ingredients for the masala 1
6 kasmiri chilies
1 tbsp coriander seeds
1 tsp cumin seed
1 tsp pepper corn
1 javitri / mace flower
1 black cardamom
Small piece of black stone flower/ dagad phool/ phathar phool {optional}
1 bay leaf
2 cardamom
4 cloves
1 inch cinnamon
2 medium size onion
1 tbsp ginger garlic paste
Preparation:
1. Roast the dry spices until fragrant.
2. In a little oil, fry the sliced onions until lightly golden.
3. Grind the roasted spices, fried onions, and ginger-garlic paste into a fine smooth paste using water as needed.
Ingredients
1 .25 kilo mutton pieces
3 medium size onions finely chopped
3 tomatoes finely chopped
3 medium size potatoes chopped roughly
1/4 cup coriander leaves finely chopped
3 green chillies slit
clarified butter or oil
Method
1. Heat oil in a pressure cooker. Add the chopped onions and sauté until lightly golden.
2. Add the chopped tomatoes and cook until soft and mushy.
3. Stir in the prepared ground masala, followed by the mutton pieces. Mix well.
4. Add just enough water to cover the mutton. Pressure cook on high flame for 1 whistle, then on low flame for 10–15 minutes.
5. Release the steam, then add the chopped potatoes, coriander leaves, and slit green chilies.
6. Pressure cook again on high flame for 2 whistles.
7. Serve hot with rice, chapatis, or bread.
