Simple quick mutton curry prepared with red masala.
Ingredients for the masala 1
6 kasmiri chilies
1 tbsp coriander seeds
1 tsp cumin seed
1 tsp pepper corn
1 javitri / mace flower
1 black cardamom
Small piece of black stone flower/ dagad phool/ phathar phool {optional}
1 bay leaf
2 cardamom
4 cloves
1 inch cinnamon
Roast the above spices
2 Onions sliced
Stir fry the onions till lightly brown
Grind the roasted spices , fried onions and 1 tbsp ginger garlic paste along with some amount of water to a fine smooth masala.
Ingredients
1 kilo mutton pieces
3 medium size onions finely chopped
4 tomatoes finely chopped
3 medium size potatoes chopped roughly
1/4 cup coriander leaves finely chopped
3 green chillies slit
Method
Using a pressure cooker , add oil , once hot saute the onions till lightly brown , next the tomatoes. Cook tomatoes till soft. Add the ground masala , mutton pieces and just enough water. Pressure cook on high for 1 whistle then low for 10 or 15 mins . Release the steam add the chopped potatoes, Coriander leaves and 3 green chillies. Pressure cook on high for 2 whistle.
