Pomfret stuffed with a prepared masala of chilli powder , cumin , finely chopped green chillies etc.
Ingredients 3 medium size pomfret ( clean, wash and pat dry the pomfrets) (Usually I always add a mix of turmeric and salt to the pomfret, leave for Half hoour ,the was off well and pat dry ) Slit made both sides of the pomfret to fill the sides with the prepared masala.
Ingredients for the masala 4 medium size onions finely chopped 4 medium size tomatoes finely chopped 2 green chillies finely chopped 1 tsp chilli powder 1/2 tsp cumin powder 1/4 tsp turmeric powder 1 tbsp ginger garlic paste 1/4 cup finely chopped coriander leaves Salt to taste 1 tsp vinegar
Method Add oil to a pan ,once hot saute the onions till translucent. Add next the finely chopped tomatoes and 1/2 tsp of salt. Saute well and cook till tomatoes turn soft and done , cooking on medium flame, occasionally stir frying . Add the finely chopped green chillies, ginger garlic paste and vinegar. Saute on low flame. Lastly add finely chopped coriander leaves and salt if required. Allow to cool. Once cool stuff the slits of the pomfret with this prepared masala. Prepare a paste of 1tsp chilli powder, 1/2 tsp cumin powder , 1/4 tsp turmeric powder, salt to taste and very little water. Coat the pomfret with this paste.
Coat the pomfrets with rice flour. Shallow fry the pomfrets till done.
