Lentils(Yellow split Moong ) with Oregano And Basil

Ingredients

140 gms yellow moong dal

Wash well and boil with some amount of water . When the dal comes to a boil lower the flame and allow to boil on low till done.

Reserve the water.

2 medium size tomato finely chopped

2 green chilli finely chopped

1 tbsp butter

1 tsp oil

1 tsp dried basil

1 tsp dried oregano

1 tsp pepper powder

1 stock cube

4 to 5 cloves of garlic finely chopped

1/2 tsp fennel seeds powdered


Method

Add the oil and butter to a vessel. Heat up on low flame. Stir fry the finely chopped garlic till light brown then add the finely chopped green chillies and stir fry.

Mix in the finely chopped tomatoes add some of the dal water to assist cooking the tomatoes. Cook tomatoes till soft. Now add the oregano and basil mix well. Mix in the stock cube and pepper powder. Stir fry well adding some of the dal water. Lastly add the boiled dal and water if required. Cook for another 5 mins on medium flame. Garnish with the coriander leaves.
