Kadhai Chicken

A quick fix chicken gravy, goes well with some chapatis or rotis.


Ingredients 500 gms chicken pieces cleaned and washed well Marinade the chicken pieces with tsp of ginger and garlic paste and chilli powder And salt to taste.


For the gravy Powder 1 /2tsp each fennel seeds and pepper corn 1/4tsp methi/fenugreek seeds 1 tbsp each finely chopped ginger and garlic 1 green chili finely chopped 2 finely chopped tomatoes 2 tomatoes puree 1/2 tsp chilli powder 1/2 tsp cumin powder 1/2 tsp pepper powder

1/2 tsp garam masala powder 1/2 tsp apple cider vinegar 1/2 cup finely chopped coriander leaves

Method

Saute tbsp each finely cut ginger and garlic along with 1 green chilli chopped

Finely chop 2 onions and saute till lightly browned add 2 small finely chopped tomatoes with little water and salt and cook till soft

Puree 2 small tomatoes and add to the saute ingredients Add 1/2tsp chilli powder and corriander powder 1/2tsp cumin powder and the fennel ,pepper corn and methi powder mix cook for a while

Add the chicken pieces and some finely chopped coriander leaves Cook till almost done Then add 1/2tsp garam masala and 1/2tsp apple cider vinegar. And some finely chopped coriander leaves. Cook till chicken is done.
