Chicken Gravy

A hearty, and comforting chicken dish with layers of flavour from fresh spices, tomato base, and warm masalas—perfect for rice, chapatis, or bread.
Ingredients
For the Ground Spice Mix
½ tsp fennel seeds
½ tsp peppercorns
¼ tsp fenugreek seeds
For the Gravy:
20 grams finely chopped ginger
20 grams finely chopped garlic
1 green chilli, finely chopped
2 medium onions, finely chopped
2 tomatoes, finely chopped
Tomato puree made from 2 tomatoes
½ cup water
Spice Powders:
½ tsp coriander powder
½ tsp cumin powder
½ tsp pepper powder ( optional)
½ tsp garam masala powder
Ground spice mix (prepared above)
For the Chicken:
500 grams chicken pieces
1 tsp red chilli powder or according to one's preference
1 tsp ginger garlic paste
Salt to taste
(Marinate chicken with the above and set aside)
Final Touch:
Fresh coriander leaves (finely chopped)
½ tsp apple cider vinegar or white vinegar
Method
1. Prepare the Spice Mix: Dry grind fennel seeds, peppercorns, and fenugreek seeds to a fine powder. Set aside.
2. Heat oil in a pan. Sauté chopped ginger, garlic, and green chilli until aromatic.
3. Add chopped onions and sauté until lightly browned. Add chopped tomatoes and cook until soft and mushy.4. Mix in the tomato puree and ½ cup water. Cook for a few minutes, stirring occasionally.
5. Add Spices:
Add coriander powder, cumin powder, pepper powder, garam masala, and the prepared spice mix. Sauté well for 1 minute.
Add Chicken:
6. Add the marinated chicken pieces. Mix well to coat in the masala. Cook for 3 minutes on medium flame, stirring occasionally.
7. Add just enough water and a handful of chopped coriander leaves (reserve some for garnish). Cover and cook until the chicken is done.
8. Add the remaining coriander leaves and vinegar. Adjust seasoning if needed.9. Simmer for another 5 minutes. Serve hot with rice, chapati, or bread.
