Chicken Curry

A delicious, comforting chicken curry made with a flavourful homemade ground masala, perfect for a hearty family meal.
Ingredients for the Ground Masala
4 dry Kashmiri red chillies
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp peppercorns
½ tsp fennel seeds
¼ tsp turmeric powder
¼ tsp sesame seeds
¼ tsp poppy seeds
¼ tsp fenugreek seeds
1 onion
1 tbsp ginger garlic paste
Method:
Grind all the above ingredients with just enough water to make a fine paste. Set aside.
To Marinate the Chicken
600 grams chicken pieces
¼ tsp turmeric powder
½ tsp salt (or to taste)
Method:
Marinate the chicken with turmeric and salt. Set aside while you prepare the curry base.
Ingredients for the Curry
2 medium onions, finely chopped
2 medium tomatoes, finely chopped
2 potatoes, peeled and cubed
2 green chillies, slit
Salt to taste
1 tsp white vinegar
½ tsp garam masala powder
Fresh coriander leaves, chopped (for garnish)
Oil for cooking
Method
1. Heat oil in a pan. Add the finely chopped onions and sauté until they turn lightly brown.
2. Add the chopped tomatoes and a little salt. Cook until the tomatoes turn soft and mushy.
3. Stir in the ground masala paste along with ½ cup water. Cook for 2 minutes, stirring occasionally.
4. Add the cubed potatoes and cook for 1 minute. Then add the marinated chicken pieces and sauté for another 2 minutes.
5. Pour in just enough water to get the desired curry consistency. Mix well.
6. Cover and cook until the chicken and potatoes are fully cooked and tender.
7. Adjust salt. Add chopped coriander leaves, vinegar, garam masala powder, and the slit green chillies. Simmer for another 2 minutes.
Serve hot with steamed rice, roti, or parathas for a satisfying meal.
