Jowar (Sorghum) Pancakes – A Wholesome and Nutritious Breakfast Delight

Start your day on a healthy and flavourful note with these soft Jowar (Sorghum) Pancakes. Packed with the goodness of sorghum flour, known for its high fiber and gluten-free properties, these pancakes are a perfect blend of nutrition and taste. The addition of egg whites provides a light, airy texture, while the warm spice mix enhances the flavour, making them a comforting breakfast option.



Ingredients



3 egg whites



A pinch of salt



40 grams brown caster sugar or powdered sugar



100 grams jowar (sorghum) flour



1 cup warm milk



½ teaspoon baking powder



1 teaspoon spice mix powder



Oil and butter for cooking



Method



1. In a mixing bowl, add a pinch of salt to the egg whites and whisk until stiff peaks form.



2. Gradually add the brown caster sugar and whisk again until well incorporated.



3. Sift the jowar flour and gently fold it into the egg white mixture.



4. Add the spice mix powder and baking powder, ensuring everything is combined well.



5. Slowly pour in the warm milk, stirring continuously to form a smooth batter.



6. Heat a pan with a little oil and butter. Pour a ladleful of batter and cook on medium flame until bubbles form on the surface.



7. Gently flip the pancake and cook until golden brown. Repeat with the remaining batter.



8. Serve warm, drizzled with honey and topped with a dollop of butter.

Spice mix powder can be substituted with


Cinnamon powder and nutmeg powder



Or just vanilla essence
