2cups self raising flour
1cup oats
1/2 to 1/4 cup caster sugar
1 tbs vanilla essence
1tsp baking powder
2 eggs
1and1/4to 1 and1/2 cup milk
1 tbsp butter
Method
Separate the eggs. Whisk the egg whites till stiff. Whisk the yellow of the eggs with a tbsp of butter and caster sugar add 1/4 cup milk and a tbsp of vanilla essence and mix together
Powder the oats.
Sift the flour and baking powder . Add the oats and flour to the egg mixture along with the remaining milk and mix well. Once mixed well fold in the egg whites gently
Heat a pan with little butter and oil and add the batter. Once u see little bubbles on top turn over.
Serve with maple syrup or honey
This quantity gives 6 pancakes
TO GET A GOOD STIFF EGG WHITE ADD A PINCH OF SALT TO THE EGG WHITE AND THEN WHISK
