INGREDIENTS
200 gms plain flour
1/3 cup oil
2 tsp baking powder
1/4 tsp sodabicarb
75 gms powdered sugar
150 gms blue berry fruit filling
200 ml butter milk ( 1/2 cup curd and 1/2cup water mix well )
1 cup warm water
1 tsp vanilla essence
METHOD
In a deep bowl dish add the oil , powdered sugar and mix well with a manual egg beater.
Then add the buttermilk mix well. Now add in the blueberry filling mix well.
Sift the plain flour,sodabicarb and baking powder together.
Add this sifted flour to the buttermilk mixture. Mix well.
Add vanilla essence and the 1 cup warm water.
Mix this batter well.
Heat up a nonstick pan on low gas add a tsp of butter. Pour 2 serving spoon of the batter. Place a lid on the pan continue to cook on low gas.
After a minute lift the lid u will see bubbles forming before flipping the batter should not be completely wet on the top.
It will start looking fluffy , at this stage flip to the other side continue to cook on low gas for 1/2 minute.remove . Follow same procedure for rest of the batter.
Makes Total 7 pancakes(5 inch dia)
