A good roast chicken is perfect for any festivals and family gatherings. At my home a roast chicken is generally prepared on christmas and a family get together. My kids love it especially when served with their favourite veggies and a side gravy or sauce to go with it.
Here is a recipe of roast chicken marinated with spices, curd and ghee [clarified butter] served with baked tomatoes , french beans and carrots tossed in mint garlic sauce also served with crispy baked wedges.
So if you are planning a family get together or want to make something special here is a fantastic recipe to try.
For the vegetables (french beans and carrots) Chop roughly the vegetables , can also add cauliflower. Chop a good handful of mint leaves ,few finely chopped garlic cloves , a bit of butter and olive oil or vegetable oil. Mix well . Bake at 180 degrees for 30 mins or till done
For the crispy baked potato wedges
Peel and chop the potatoes. Into wedges Add enough water to a vessel. Bring to boil Then add the sliced potatoes. Cook for a minute.drain out completely and allow to cool. Once cooled. Mix in chili powder, pepper powder ,some oregano ,salt to taste. Sprinkle in rice flour. .place a baking paper on a baking tray. Place the wedges on it . Drizzle litter oil over the wedges. Bake at 180 degrees till done
For the roast chicken (1kilo 300gms) Marinade the whole chicken ( after cleaning and washing well) 2 tbsp whisked curd /yoghurt Chili powder, coriander powder, pepper powder, cumin powder and garam masala powder. 1 Tbsp of ginger garlic paste. Add tbsp of honey ,salt to taste and a cap full of vinegar and 2 tbsp gheeix .Mix all the above into a paste Rub this paste into and all over the chicken. Keep in the fridge overnight to marinade Keep out at least 1 and 1/2hr. Add some tomatoes halves to the baking dish. (Optional) drizzle some amount whiskey over the chicken and tomatoes. Bake at 220 degrees cover with foil first .and bake for an 45 to 50 mins. Then remove foil and brush the whole chicken with stock that has oozed out from the chicken and Tomatoes. Keep again to bake for another 20 mins or till done. To make sauce. Take the stock or liquid that is the chicken baking tray. Add a maida paste (maida /flour and water) To the stock adding little more water and spice ( chili powder, cumin and coriander and garam masala powder) and bring to a boil.
