Crispy Fried Prawns

Today, I decided to treat my boys to something special. While they aren’t big fans of prawn curries, they absolutely love a good chilli fry or masala-fried prawns. So, I prepared some crispy fried prawns that are lightly spiced and coated in a smooth, flavourful batter. Finally, a coating of panko bread crumbs that gives them a perfect crunch.

It’s a special feast for my kids, while my husband and I are more than happy with our simple dal rice and crispy masala fried Bombay ducks.



Crispy Fried Prawns Recipe

Ingredients:

30 prawns, cleaned, deveined, washed, and patted dry

For the Batter:

2 tablespoons cornflour

4 tablespoons all-purpose flour (maida)

1 egg

1/2 cup chilled soda water

Salt, to taste

Pepper powder according to taste

Chilli powder according to taste

Method:

1. Prepare the Batter:

  In a mixing bowl, whisk the egg using an electric hand mixer until it becomes frothy and light.

Gradually add the cornflour, all-purpose flour, salt, pepper powder, and chilli powder to the whisked egg.

Slowly pour in the chilled soda water, whisking continuously, until you achieve a smooth, lump-free batter.

2. Coat the Prawns:

 Dip each prawn into the prepared batter, ensuring they are well-coated.

 Remove the prawns from the batter one by one and coat them evenly with panko bread crumbs.

3.Fry the Prawns:

 Heat oil in a shallow pan over medium heat. Once the oil is hot, carefully place the coated prawns into the pan.

 Shallow fry the prawns until they are golden brown and crispy on all sides, flipping as needed to ensure even cooking.

 Remove the prawns from the pan and place them on a paper towel to drain any excess oil. Serve hot with your choice of dipping sauce or as a crispy appetizer.
