Ingredients
6 eggs
Ingredients for the green masala
1 and 1/2 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp pepper corn
1 tsp ginger garlic paste
20 grams coriander leaves
1 Onion sliced
10 cashew nuts
2 green chillies
Grind all of this to a paste with just enough water.
Ingredients 2
2 onions finely chopped
3 tomatoes finely chopped
1 tsp chilli powder
1/2 tsp garam masala powder
1/4 tsp turmeric powder
200 ml coconut milk
1 and 1/2 tsp mixed dry herbs
( Mixed dry herbs consist of oregano,basil , chilli flakes, parsley and thyme)
Method
Add some Clarified butter ( ghee) , once hot add the finely chopped onions and saute till lightly brown. Add in the chopped tomatoes, salt to taste and cook till soft and done. Add the chilli powder, garam masala powder, turmeric powder and saute. Add 1/2 cup water and allow to cook for a minute on low flame. Add the ground green masala and saute . Add the 1 cup water and cook for 2 mins on low flame. Add the mixed dry herbs . Add the coconut milk and 1/4 cup water. Cook for a minute. Drop the eggs gently into the curry using a small bowl. Cover and cook on low flame till done. Lastly add the finely chopped coriander leaves.
