Curry Powder Recipe 3

This is a simple everyday curry powder that’s extremely versatile and easy to use.


Perfect for quick home cooking, it works beautifully with green pastes, red chilli pastes, coconut milk, or even on its own for mild curries.


Use this curry powder:


With a green paste (coriander leaves, mint, green chillies) for a fresh green curry


As is, for a mild curry, with or without coconut milk


Along with chilli powder for vegetables and stir-fries


With a red paste (Kashmiri chillies, ginger, garlic) for a rich, flavourful curry

Curry Powder Recipe


Ingredients


100 grams coriander seeds


50 grams cumin seeds


40 grams peppercorns


25 grams fennel seeds


15 grams fenugreek seeds


Method


Sun-dry all the spices for 3 days.


Dry roast the spices until slightly aromatic.


Allow them to cool completely.


Dry grind the spices in batches.


Sift after each batch.


For best results, sift twice.


Dry grind the leftover coarse mixture after sifting.


Yield: Approximately 240 grams



Recipe 1: Mince Curry


Green Paste Ingredients


40 grams coriander leaves


25 grams fresh basil leaves


3–4 green chillies


3 cloves garlic (approximately 10–15 grams)


Spice Powders


1 tbsp curry powder


¼ tsp turmeric powder


½ tsp garam masala powder


¼ or ½ tsp chilli powder


¼ tsp pepper powder


Other Ingredients


500 grams mince


220 grams onions (2 large), finely chopped


250 grams tomatoes (3), finely chopped


140 grams shelled green peas


2 tsp apple cider vinegar (or any vinegar of choice)


Oil and salt, as required


Ground Paste Method


Grind coriander leaves, basil leaves, green chillies, and garlic to a fine paste using just enough water.


Cooking Method


Heat oil in a pan. Sauté the onions until lightly brown.


Add tomatoes and cook until soft and mushy (adding salt helps).


Add the ground green paste and mix well.


Add 1 cup water and cook for a minute.


Add the mince and stir-fry until well coated.


Add green peas and cook for 5 minutes.


Add sufficient water for desired curry consistency and cook till done.


Adjust salt if required.


Finish with apple cider vinegar and mix well.



Recipe 2: Chicken Curry


Ingredients


500 grams chicken pieces


2 onions, finely chopped


1 tomato, finely chopped


1 green chilli, finely chopped


200 ml coconut milk


Spice Powders


1 tbsp curry powder


½ tsp garam masala powder


½ tsp chilli powder


¼ tsp turmeric powder


Salt to taste


Method


Marinate chicken with salt and ¼ tsp turmeric powder.


Heat oil and sauté onions until lightly brown.


Add tomatoes and green chillies; cook until tomatoes are soft.


Add salt, curry powder, garam masala, chilli powder, and turmeric powder.


Add ½ cup water and cook for a minute.


Add chicken pieces and coat well with the masala.


Add required water and cook till the chicken is done.


Pour in coconut milk and cook for another 5 minutes.
