Crumb Fried Rawas Fillet with Sweet & Spicy Gravy
A delicious combination of crispy crumb-fried Rawas fillets served with a flavourful sweet and spicy tomato gravy, fried rice and stir-fried vegetables.
Ingredients
For the Fish Marinade
1 tbsp coriander powder
1 tsp cumin powder
½ tsp pepper powder
¼ tsp turmeric powder
A touch of salt
1 tsp ginger-garlic paste
1 tbsp oyster sauce
1 tsp vinegar
1 tsp oil
1 tbsp sweet and spicy tomato ketchup
For Coating & Frying
2 eggs
1 tsp chilli powder, or as per taste
A touch of salt
Panko breadcrumbs
Oil for shallow frying
Method – Preparing the Fish
In a bowl, combine the coriander powder, cumin powder, pepper powder, turmeric powder, salt, ginger-garlic paste, oyster sauce, vinegar, oil and sweet and spicy tomato ketchup.
Mix everything well to form a marinade.
Coat the Rawas fillets evenly with the marinade and set aside.
Crumbing the Fish
Whisk the eggs well in a bowl.
Add the chilli powder and a touch of salt. Mix well.
Dip each marinated fish fillet into the egg mixture, coating it well.
Immediately coat the fillet generously with panko breadcrumbs.
Shallow fry the crumb-coated fish in hot oil until golden, crisp and cooked through.
Remove and drain on a kitchen towel.
Sweet & Spicy Gravy
Ingredients
For the Gravy
20 g garlic, finely chopped
20 g ginger, finely chopped
400 g tomatoes, peeled, roughly chopped and pureed
200 ml water
Sauces
100 ml sweet and spicy tomato ketchup
1 tbsp mustard sauce
1 tbsp soya sauce
1 tbsp oyster sauce
Spice
1 tsp chilli powder
Vegetables
1 cup spring onion greens, finely chopped
½ green bell pepper, finely chopped
½ yellow bell pepper, finely chopped
½ red bell pepper, finely chopped
Cornflour Slurry
1 tsp cornflour
½ cup warm water
Mix the cornflour and warm water well and keep aside.
Method – Preparing the Gravy
Heat a little oil in a pan.
Add the finely chopped garlic and ginger and sauté until lightly browned.
Add the tomato puree and cook for about 1 minute.
Pour in the 200 ml water, mix well and cook for another 2 minutes over medium heat.
Add the sweet and spicy tomato ketchup, mustard sauce, soya sauce and oyster sauce. Mix well.
Add the chilli powder and combine.
Pour in the prepared cornflour slurry while stirring continuously.
Finally, add the chopped spring onion greens and finely chopped bell peppers.
Mix well and cook for 2–3 minutes. The gravy should be thick, glossy and flavourful.
To Serve
Serve the crispy Crumb Fried Rawas Fillets with the sweet and spicy gravy on the side, accompanied by fried rice and stir-fried vegetables.
