Norwegian Salmon Served with Couscous and Broccoli tossed in
Oystersauce
The Norwegian Salmon is Marinated with some Indian spice mix and then shallow fried with olive oil and butter
Served with
Couscous which is a form of semolina granules , slightly bigger than rava
Norwegian Salmon
Ingredients
500 gms Norwegian Salmon
de-scale the fillet , wash well and cut in four pieces.
Pat dry
For the marinade
1 tbsp chilli powder
1 tbsp coriander powder
1 tsp pepper powder
1 tsp ginger garlic powder
Salt according to liking
3 tbsp olive oil
Mix all the ingredients well and apply to the salmon fillets.
Marinate for an hour, keep in refrigerator.
For Frying
Heat up a pan with some olive oil and butter
Place the marinated fish skin side down first for a minute, keep pouring the butter and oil mixture over the fish.
Turn to the other side following the same process.
For the Couscous
To a pan I added
2 tbsp Olive oil
1 tbsp Butter
Some dry herb mix
Chilli powder according to liking
Pepper powder according to liking
1 Stock cube
4 cups water
Bring all this to a boil. Once the stock begins to boil add 2 cups couscous, stir. Cover and switch gas off.
Keep covered for 5 to 10 mins
For the broccoli
500 gms broccoli
Toss in a tbsp of oyster sauce, chilli sauce and crushed pepper corn.
