Creamy Noodle Salad

Ingredients
For the Salad
2 packets Yippee Noodles (72 g each)
1 generous bunch salad leaves or lettuce, roughly chopped
1 cup black olives
¼ cup jalapeños
1 cup cherry tomatoes, halved
3 slices canned pineapple, cut into bite-sized pieces
For the Dressing
1 cup vegetarian mayonnaise
1 tbsp olive oil
1 tbsp apple cider vinegar
2 sachets Yippee Tastemaker
Method
Preparing the Dressing
In a bowl, add the vegetarian mayonnaise.
Add the 2 Yippee Tastemaker sachets and mix well.
Pour in the olive oil and apple cider vinegar.
Mix until smooth and creamy. Set aside.
Cooking the Noodles :
Bring a pot of water to a boil.
Add the Yippee noodles and cook until al dente (firm to the bite).
Drain the noodles using a strainer or colander.
Immediately immerse the strainer containing the noodles into ice-cold water.
Remove, drain thoroughly, and set aside.
Using a fork, gently fluff the noodles.
Assembling the Salad :
In a large mixing bowl, combine the salad leaves, black olives, jalapeños, cherry tomatoes, and pineapple pieces.
Toss gently to combine :
Add the cooled and well-drained noodles.
Using two forks, gently toss everything together.
Add the prepared dressing and mix lightly until the salad is evenly coated.
Chill before serving.
Tips
Cook the noodles al dente to maintain a firm texture and prevent them from becoming mushy.
Immerse the noodles in cold water while they are still in the strainer. This stops the cooking process and helps retain their texture.
Use two forks to toss the salad gently. This prevents the noodles from breaking and ensures the dressing coats everything evenly.
Serve well chilled for the best flavour and texture.
Variations & Alternatives
Replace apple cider vinegar with a sprinkle of chaat masala for a tangy Indian twist.
Use iceberg lettuce, rocket leaves, or mixed salad greens instead of regular lettuce.
Al Dente: Cooked until just tender but still slightly firm to bite, not soft or mushy.
