Coconut Chicken Curry with Freshly Ground Roasted Masala

Ingredients
For the Chicken
500 grams chicken pieces, washed, cleaned, and drained
Salt to taste
For the Ground Masala
4 dried Kashmiri chillies
3 dried Bedgi chillies
1 tbsp coriander seeds
1 tsp cumin seeds
½ tsp peppercorns
¼ tsp fenugreek seeds
¼ tsp poppy seeds
¼ tsp sesame seeds
3 cloves
1 small black cardamom
½-inch cinnamon stick
1 small bay leaf
½ cup desiccated coconut or freshly grated coconut
1 medium onion, sliced
½ tsp turmeric powder
Small ball of tamarind
A little oil for frying
For the Curry
2 medium onions, finely sliced
Few curry leaves
200 ml coconut milk, diluted with ½ to 1 cup water (as preferred)
(I have used Dabur tetra pack coconut milk.)
Method
Prepare the Ground Masala
Dry roast the Kashmiri chillies, Bedgi chillies, coriander seeds, cumin seeds, peppercorns, fenugreek seeds, poppy seeds, sesame seeds, cloves, black cardamom, cinnamon, bay leaf, and coconut until aromatic. Set aside to cool.
Heat a little oil and fry the sliced onion until lightly browned.
Combine the roasted ingredients, fried onion, turmeric powder, and tamarind.
Grind to a smooth paste, adding just enough water as required.
Marinate the Chicken
Add salt to the cleaned chicken pieces.
Mix in 2 tablespoons of the prepared ground masala.
Set aside for 15–20 minutes.
Prepare the Curry
Heat oil in a pan and sauté the finely sliced onions until lightly browned.
Add the marinated chicken and stir-fry for a few minutes.
Toss in the curry leaves and continue stir-frying for a minute.
Add the remaining ground masala and mix well.
Pour in enough water to achieve the desired consistency and bring to a boil.
Cover and cook on medium flame until the chicken is tender.
Add the diluted coconut milk and adjust the seasoning.
Simmer for another 5 minutes.
