Chicken with Spinach

A simple, wholesome, and flavourful chicken dish made with fresh spinach and a mildly spiced green masala. The addition of East Indian Bottle Masala gives this curry a delicious depth of flavour, while the spinach adds freshness and nutrition. Serve it with chapatis, Chitaps or steamed rice for a satisfying family meal.
For the Ground Masala
Ingredients
2 dried Kashmiri chillies
2–3 green chillies
1 medium onion, sliced
1-inch piece ginger, chopped
2 cloves garlic, minced
100 grams spinach, roughly chopped
1 tbsp clarified butter (ghee)
Method
Heat the clarified butter in a pan.
Add the ginger and garlic and sauté until aromatic.
Add the sliced onion, dried Kashmiri chillies, and green chillies. Sauté for 2–3 minutes.
Add the spinach and stir-fry until wilted and cooked.
Remove from the heat and allow the mixture to cool.
Grind to a smooth paste using a little water if required. Set aside.
For the Chicken
Ingredients
500 grams chicken, cut into pieces
1 tsp East Indian Bottle Masala powder
Salt to taste
300 grams spinach, washed, cleaned, and roughly chopped
2 medium onions, finely chopped
2 medium tomatoes, finely chopped
1–2 tbsp clarified butter (ghee)
Water, as required
Method
Marinate the well-washed and drained chicken pieces with the East Indian Bottle Masala powder and salt. Set aside for 15–20 minutes.
Heat the clarified butter in a pan or kadai.
Add the finely chopped onions and sauté until lightly browned.
Add the tomatoes and a little salt. Cook until the tomatoes soften and break down.
Add the marinated chicken and stir-fry for 2–3 minutes.
Mix in the prepared ground masala and add just enough water to form a light gravy.
Cover and cook until the chicken is tender and fully cooked.
Add the chopped spinach and continue cooking for 4–5 minutes until the spinach is wilted and well incorporated into the curry.
Adjust the seasoning and simmer for another minute.
Serving Suggestion
Serve hot with chapatis, neer dosas, appams, or steamed rice.
