For the Chicken Xacuti (recipe 3)
Ingredients
500 gms chicken pieces
Cleaned washed well and pat dry
For the marination
50 gms coriander leaves with stem
2 green chillies
1/2 tsp cumin powder
1/2 tsp ginger garlic paste
1 onion sliced
Grind to paste adding very little water.
Method
Marinate the chicken with this green masala and salt to taste for half hour.
Ingredients for the ground masala 2
3 dry bedgi chillies or kashmiri Chillies
1/2 inch cinnamon
1 tsp coriander seeds
1 tsp pepper corn
1 tsp fennel seeds (saunf)
3 cloves
2 cardamom
1/2 cup desiccated coconut
Dry roast the spices , chillies and desiccated coconut
1 onion sliced
Stir fry onions till translucent
1 tsp ginger garlic paste
1/2 tsp turmeric powder
Grind all the above mentioned ingredients to a fine paste adding just enough water.
Ingredients 3
1 tomato sliced
Salt to taste
1 cup water
1tbsp cup coriander leaves finely chopped
Method
Add 3 tbsp clarified butter/ ghee , once hot saute the sliced tomatoes lightly. Add the marinated chicken and cook on medium flame for a minute. Add the ground masala ( ingredients 2) , 1 cup water , allow to cook till almost done. Add salt to taste and finely chopped coriander leaves . Cook till done.
