Cocktail Sausage/Pork Sausage Chilli Fry

A quick and flavourful dish made with cocktail sausages, potatoes, fresh fenugreek leaves, and green chillies. Perfect served with hot chapatis for a simple family meal.


Ingredients


500 grams cocktail sausages or chicken sausages, chopped


100 grams fresh fenugreek (methi) leaves, washed, leaves separated and roughly chopped


2 potatoes, peeled and chopped


3 green chillies, finely chopped


2 medium onions, finely chopped


½ teaspoon turmeric powder


Pepper powder, as per taste


Salt, to taste


2 tablespoons oil


Method


Heat the oil in a pan and sauté the chopped onions until they turn soft and translucent.


Add the chopped potatoes, green chillies, and salt to taste. Mix well, cover, and cook until the potatoes are nearly done.


Add the chopped cocktail sausages. Stir in the turmeric powder and pepper powder. Mix well and cook for a few minutes.


Add the roughly chopped fresh fenugreek leaves and continue cooking until the potatoes are fully cooked, the sausages are heated through, and the fenugreek leaves have wilted.


Check the seasoning and adjust if required.


Serve hot with chapatis.


A simple, delicious, and comforting meal with the goodness of fresh fenugreek leaves and the spicy flavour of sausages.
