An East Indian Coconut sweet/cake, similar to the Goan Baath Cake.
A yummy coconut cake made with desiccated coconut , semolina and cashew nuts.
Ingredients 400 gms sugar ( powder the sugar) 200 gms desiccated coconut 200 gms fine semolina (rawa) 6eggs 1/4 tsp rose essence or 2 tsp vanilla essence 4 tbsp butter 1tsp baking powder 50 gms cashew nuts (powder the cashew nuts)
Method Separate the yolks and whites of the eggs. Add a pinch of salt to the egg whites and whisk till almost stiff. Start adding the powder sugar and whisk till all the powder sugar is used. Keep aside. Whisk the yolks and the butter together and keep aside. Add the the semolina to the stiff egg white mixture, fold in well. Next add the desiccated coconut and fold well Add next the ground cashew nuts , baking powder , essence and fold well with a spatula. Lastly add in the whisked egg yolk and butter mixture. Fold well till everything is well incorporated.
Bake in preheated oven at 160 Degrees in a 8inch x 8inch baking dish.
