Chicken Xacuti 2 ways. Xacuti is a coconut base curry , Spices and coconut roasted and ground to a smooth paste .
Chicken Xacuti Recipe 1
Ingredients 10 kashmiri chillies 1 tbsp coriander seeds 1 tsp cumin seeds 1 tsp pepper corns 1/4 tsp fennel seeds 1/4 tsp sesame seeds 1/4 tsp poppy seeds 1/4 tsp Fenugreek seeds 1 inch cinnamon 3 cardamom 6 cloves 1/2 mace flower (javitri) 1/2 star anise 1 bay leaf 1/4 tsp turmeric powder
Dry Roast all the above ingredients.
200 gms onions sliced fry till lightly brown in little oil 1/2 cup desiccated coconut dry roast the desiccated coconut
1 tbsp Ginger garlic paste Little tamarind
Grind all the above ingredients to a paste with just enough water
Ingredients 2 200 ml thick coconut milk 2 medium size onion finely chopped
800 gms chicken pieces Add salt , pepper and turmeric to the chicken.
Method Add some amount of oil, stir fry finely chopped onions till lightly browned. Add the chicken and stir fry 1/2 a minute. Add the ground masala and 1 cup water. Allow to come to a boil, Lower the flame and allow the chicken to cook. Once almost done add salt if required and 200 ml coconut milk. Cook for another 10 mins or till done.
For the Quick Raw Mango pickle 1 Raw Mango cut into thin slices pickled red chillies or green chillies finely chopped according to taste icing sugar according to taste salt chaat masala Olive oil
Mix all the ingredients together.

GOAN CHICKEN XACUTI
This is another way to prepare chicken xacuti. Here the chicken is first marinated in a ground green paste. Another Masala with coconut and other spices are ground to form the base of the curry.
Ingredients 1 1st marinade Small bunch 100 gms coriander leaves and 2 green chilli and 1/2tsp ginger garlic paste Grind to a paste .
2nd Ingredient 500 gms chicken pieces Marinade the chicken in the green paste with little salt and keep aside .
3rd Ingredients
Masala2 3 to 4 kashmiri chillies 2 tsp coriander seeds 1 /2 tsp cumin seeds 1/2 tsp pepper corns 1/4 tsp mustard and 1/4tsp fenugreek seeds 1/2 tsp fennel seeds (saunf) 1/4tsp sesame seeds 1small piece cinnamon stick 2 cardamom 3 cloves Roast all the above Add 1/4tsp turmeric And 1tsp ginger garlic paste to the above roasted spices .keep aside Roast 8 to 9 tbsp desiccated coconut Slice one big onion or 2 medium size onion And stir fry till lightly brown Little tamarind Grind all the above of the 3rd ingredient to a fine paste
Method Finely chop 2 small onion Add oil and Saute onions till brown . Add 1 chopped tomatoes and stir fry till soft Once the tomatoes are done add the add the marinated chicken pieces in green paste and stir fry Add the ground paste (3rd ingredient) And mix well add some water Salt to taste Allow to come to a boil . Once it comes to a boil put on low flame .and cook till chicken is done.
