Chicken Mince with Bottle Gourd (Lauki)

This Chicken Mince with Bottle Gourd (Lauki) is a simple home-style dish made with everyday ingredients and flavoured with East Indian Bottle Masala .
Ingredients
500 grams chicken mince
500 grams bottle gourd (lauki), chopped
Ingredients 2
2 medium onions, finely chopped
3 tomatoes (approx. 300 grams), finely chopped
2 green chillies, finely chopped
½ cup coriander leaves, finely chopped
1 tbsp ginger garlic paste
1–2 tsp apple cider vinegar (or any vinegar)
Spice Powders
1 tbsp coriander powder
½ tsp turmeric powder
½ tsp garam masala powder
¼ tsp pepper powder
¼ tsp chilli powder
1 tbsp East Indian Bottle Masala
(East Indian Bottle Masala can be substituted with Malvani Masala powder or any good ready-to-use chicken masala).
Method
1)Heat oil in a pan and sauté the finely chopped onions until light brown.
2)Add the chopped tomatoes and salt to taste. Cook until soft and slightly mushy.
3)Add the green chillies and mix well.
Add all the spice powders along with 1 cup water. Cook for 2 minutes, stirring occasionally.
Add the ginger garlic paste and mix well.
4)Add the chicken mince and stir well, coating it evenly with the masala.
Add the chopped bottle gourd and another ½ cup water.
5)Cover and cook until the mince and bottle gourd are nearly done.
Add 1/4 cup chopped coriander leaves and vinegar. Mix well.
Cook until completely done.
6)Garnish with the remaining 1/4 cup coriander leaves.
Serve hot with chapatis or pav (bread).
