Chicken Vindaloo with Coconut Rice and Fried Brinjals/Eggplants

This Chicken Vindaloo is an East Indian Vindaloo preparation consisting of Kashmiri chillies , cumin seeda , garlic cloves . This Chicken Vindaloo is best servred with a simple Coconut Rice and some Fried Eggplants. A total satisfying and comfort meal , with some awesome East Indian flavours.



Chicken Vindaloo

Ingredients

700 to 900gms chicken pieces

For the vindaloo masala 10 Kashmiri chillies 1 tsp cumin seeds 12 garlic cloves 1/4tsp turmeric powder 1 tbsp vinegar

Grind the above to a fine paste/masala

Marinade the chicken pieces with 1/2tsp chilli powder and 1/4tsp cumin powder and 1/4tsp turmeric powder and salt to taste

Sear the chicken pieces (lightly fry for just few minutes till lightly brown) and keep aside.

Take 2 medium onions and grind to paste. 2 to 3 medium potatoes chopped roughly (optional)

Heat up a vessel with oil. Add the ground onion paste and fry till lightly brown. Add the ground vindaloo masala with little water and salt to taste. Allow to cook for 5 to 10 mins. Add the potatoes and chicken pieces. Add little water if required. And allow to come to a boil. Then lower the flame and cook till done

For the Coconut Rice Ingredients 2 cups basmati rice wash and soak for 15 mins 1 tsp coriander powder 1/4 Tsp cumin powder 1/4 tsp garam masala powder 1 stock cube hot water 25 gms Coconut powder 1 bay Leaf 3 cloves 1 tsp pepper corn

Method Add 2 tbsp ghee. Add in the bay leaf, cloves and pepper corn. Add in 1 finely chopped onions and stir fry till lightly brown. Mix in the rice , Coriander,cumin and garam masala powder stir fry Dissolve the coconut powder in a cup of hot water. Add this coconut milk to the rice, stock cube and a little extra hot water . The liquid should be 1/2 inch above the rice. Cook till done

Fried Brinjals 1 big size Brinjal Slice the brinjals Marinate the sliced with chili powder (according to taste), 1/4 tsp tempero di cuddi or garam masala powder. Recipe for Tempero di cuddi salt to taste, 1tsp garlic powder ,1 tbsp finely chopped Coriander leaves

whisk to 2 eggs with a pinch of salt

Panko bread crumbs or bread crumbs

Dip the slices into the egg mixture then coat with panko breadcrumbs shallow fry.



Tempero Di Cuddi powder Recipe


Ingredients

100 gms cinnamom

40 gms cloves

40 gms cardamom

40 peppercorn

20 gms star anise

10 gms mace [javitri]

10 gms bay leaf

5 gms all spice

5gms triphal /indian schezwan pepper corn

10 gms saunf / fennel seeds

10 gms fenugreek seeds[methi seeds]

10 gm black cumin[shah jeera]



Dry all the above ingredients well in the sun for one or two days. Then lightly roast ,once cool ,dry grind the spices, sift well and bottle once cooled. Used for flavouring chicken, mutton ,pork and beef.

If you don't have this spice mix then the next alternative is a good garam masala powder.
