Cheesy Mince and French Fries Bake with Chimichurri

A hearty, comforting and flavour-packed dish that combines layers of delicious semi-gravy mince, crispy potatoes, melted cheese and a fresh chimichurri topping. Perfect for family meals, game nights or whenever you're craving something indulgent.
Ingredients
For the Mince
Prepare 500–750 grams of any semi-gravy style mince of your choice, such as:
Green Masala Chicken Mince
Green Masala Meat Mince
Vindaloo Mince
Any other favourite semi-gravy mince recipe
For the Potato Layer
French fries or fried potato wedges, as required
For the Cheese Layer
Generous amount of cheese
I used Go Cheese Four Cheese Blend, which contains:
Cheddar
Monterey Jack
Mozzarella
Colby
For the Chimichurri
40 grams fresh coriander leaves, finely chopped
1 small onion, finely chopped
1 tbsp chilli flakes (or as per taste)
1 tbsp dried oregano
2 tbsp lime juice or apple cider vinegar
Generous amount of olive oil
Salt, to taste
Pepper, to taste
Method
Prepare the Chimichurri
Combine the coriander leaves, onion, chilli flakes and oregano in a bowl.
Add the lime juice or apple cider vinegar and olive oil.
Season with salt and pepper.
Mix well and set aside.
Assemble the Bake
Prepare the mince and keep it warm.
Fry the potato wedges or French fries and set aside.
In a baking dish, spread an even layer of the mince.
Top with a layer of French fries or potato wedges.
Sprinkle generously with the cheese blend.
Repeat the layers of mince, potatoes and cheese as desired.
Place in a preheated oven or microwave and heat until the cheese has melted and is bubbling.
To Serve
Remove from the oven and finish with a generous spoonful of fresh chimichurri over the top.
Serve hot and enjoy the combination of rich mince, crispy potatoes, gooey melted cheese and the bright, zesty flavours of chimichurri. A truly satisfying meal that's guaranteed to be a crowd-pleaser!
