Brinjal vegetable with a creamy Coconut sauce along with spices and East Indian Bottle Masala
Ingredients
500 gms brinjal (small purple ones)
Chop into 4 pieces .
Add a tsp of East Indian Bottle Masala, salt and shallow fry them lightly in batches.

8 cloves of garlic finely chopped
2 inch ginger finely chopped
4 to 5 green chillies finely chopped
200 gms finely chopped onions
2 tomato sliced
2 tsp East Indian Bottle Masala
1/4 tsp turmeric powder
1/2 tsp garam masala powder
Salt to taste
1/2 tsp amchur powder
Finely chopped coriander leaves
Method
Once the oil is hot , Saute the finely chopped garlic and ginger till lightly brown. Then add the onions and fry till lightly brown. Add next the finely chopped green chillies and tomatoes and stir fry.
Next add the East Indian Bottle Masala, turmeric powder and garam masala powder along with 1/4 cup water. Cook for a minute. Toss in the lightly fried Brinjals. Cook for 2 mis on low flame.
Add salt to taste accordingly, 200 ml coconut milk and finely chopped coriander leaves. Cook for 2 mins.
