Boondi Ladoos

Boondi Ladoos are a beloved Indian sweet made by combining crunchy, fried gram flour bits (boondi) soaked in a fragrant sugar syrup with cardamom powder. This easy version, which uses store-bought raita boondi, comes together quickly without compromising on the deliciousness. Both my boys love these sweet treats, and this recipe yields 35 ladoos.

Here’s an easy way to make these delightful, sweet ladoos!





Total ladoos 35

Ingredients 5 cups boondi ( I have used a 200 ml cup for measuring) Used Garden brand Raita Boondi

2 and 1/2 cups water 5 cups sugar( I used a 200 ml measuring cup) 1/2 tsp saffron 2 tbsp almond powder ( I took 2 tbs almonds lightly roasted the almonds , allowed to cool ,then ground to powder) 1/4 cup raisins 2 tbsp ghee( clarified butter) 2 tsp cardamom powder



Method:

1. Place all the boondi in a large mixing bowl and set aside.

2. In a saucepan, combine the sugar, water, and saffron. Bring this to a boil over medium heat, stirring occasionally. Continue cooking until the syrup reaches a one-thread consistency.

3. Pour the syrup over the boondi and mix well. Cover and let it sit for 30 minutes, stirring occasionally.

4. In a small pan, heat the ghee and lightly fry the raisins until they puff up. Add these along with the almond powder , cardamom powder to the boondi mixture and combine thoroughly.

5. To shape the ladoos, grease your palms lightly with ghee. Take a portion of the mixture and press it firmly between your palms, squeezing it tightly to form a compact ball. Roll it gently to shape into a smooth, round ladoo. Repeat with the remaining mixture.


Tips:

Use a 1:1 ratio of boondi to sugar for the best results.

The amount of water should be half the amount of sugar.

Grease your hands with ghee to help shape the ladoos smoothly.

For a firmer ladoo, squeeze the boondi mixture 4-5 times in your palm before rolling it into shape.
