This is a sweet delicious ladoo made by combining fried gram flour bits which is then soaked in a sugar syrup and fragrant cardamom spice powder. Both my boys love this Ladoo. Here is an easy quick way to make these ladoos.
For the boondi I have used ready to use Garden brand Raita Boondi. This is a quick and easy method. This readymade brand just saves time and the hassle of deep frying.

Ingredients 5 cups boondi ( I have used a 200 ml cup for measuring) Used Garden brand Raita Boondi
2 and 1/2 cups water 5 cups sugar( I used a 200 ml measuring cup) 1/2 tsp saffron 2 tbsp almond powder ( I took 2 tbs almonds lightly roasted the almonds , allowed to cool ,then ground to powder) 1/4 cup raisins 2 tbsp ghee( clarified butter) 2 tsp cardamom powder
Method Place all the boondi in a deep bowl and keep aside. Add the 5 cups sugar and the 2 and 1/2 cup water and saffron strands. let it come to a boil, lower the flame to medium and keep stirring. Occasionally check for the consistency. It should reach 1 thread consistency.
Once it reaches 1 thread consistency add this syrup to the boondi and mix well. Keep covered for 30 mins. Occasionally giving it a stir. During that time take 2 tbsp ghee ,once hot add the raisins and lightly fry them Add this to the boondi alongwith the almond powder.
Mix well. Lightly add ghee to your palms and start forming into a nice round shape ball.
Tips Take a 1:1 ratio for the boondi and sugar Amount of water should be 1/2 the amount of sugar. Always apply ghee to the palm of your hand this helps in easy moulding of the ladoos Take some amount of the sweet Boondi mixture prepared and squeeze tightly using your palm, tighten it at least 4 to 5 times.This helps to form a good shape. Then gently give it a roll using your palm of your hand.
