Beetroot & Raw Mango Salad

This Beetroot & Raw Mango Salad adds instant freshness to the table. The natural sweetness of beetroot, the sharp tang of raw mangoes, and the crunch of onions come together beautifully. Finished with mint, vinegar, and a light drizzle of oil, simple, easy to prepare, wholesome, and so refreshing. a much-loved favourite at home.


Ingredients:



4 boiled beetroots, thinly sliced



2 raw mangoes (Totapuri/Bottle mangoes), thinly sliced



2 onions, sliced



A handful of mint leaves, roughly torn



1–2 green chillies, chopped



1 tbsp sesame oil or olive oil



pepper powder as per taste



1 tsp apple cider vinegar



Salt to taste



Method:



1. Add the sliced beetroots, raw mangoes, and onions to a bowl. Give it a good mix.



2. Add the torn mint leaves, green chillies, pepper powder, and sesame/olive oil.



3. Pour in the apple cider vinegar and mix well.



4. Sprinkle salt, toss once more, and serve fresh.



A simple, colourful, and refreshing salad loved at home!
