Baked Shankarpali /Shankarpara

This recipe of shankarpali is made by using short crust pastry dough. This pastry dough is easy to handle . Baked shankarpali remains fresh up to a week.




Ingredients


250 gms plain flour (keep refrigerated previous night) (maida)

125 gms cold butter cut into cubes and refrigerate till to be used

125 gms brown caster sugar, powder it

4 to 5 tbsp ice cold water.

a pinch of salt.

2 tsp vanilla essence


Method

1.Mix the flour and butter together with your fingertips till the flour looks like bread crumb mixture.

Then add the powdered sugar and vanilla essence. Mix gently.


2.Add the 4 tbsp ice cold water and form to a dough. Wrap in cling film and refrigerate for an Hour.

After an hour dust the surface with flour , divide the dough into balls. Roll out into square shape 1/2 cm thick and cut into squares or diamond shape.


3.Preheat oven to 200 degrees Celsius. Brush the baking trays with oil.

Place these cut square or diamond pieces on the baking tray .Brush cut shapes, the top side facing too with oil.

bake for least 20 to 25 mins till the underside turns light brown.
