Raspberry Filled Puffs are made using short crust pastry dough. The dough is rolled out into strips. The raspberry filling is placed in the center of the strip . Then sealed with egg wash and baked.
Ingredients
250 gms plain flour (keep refrigerated previous night) (maida)
125 gms cold butter cut into cubes and refrigerate till to be used
125 gms brown caster sugar , powder it
4 to 5 tbsp absolutely ice cold water.
a pinch of salt.
2 tsp vanilla essence
Method
Mix the flour and butter together with your finger tips till the flour looks like bread crumb mixture.
Then add the powdered sugar and vanilla essence.
Mix gently.
Add the 4 tbsp ice cold water and form to a dough
wrap in cling film and refrigerate for an Hour.
After and hour dust the surface with flour. Divide the dough into balls.
Roll out into square shape 1/2 cm thick and cut into broad strips , 1.5 inch X 3 inch
spoon each strip in the center with raspberry or any other fruit filling of choice.
Bring one end over the filling and cover with the other end brush the ends with egg wash prior folding . Follow the same for the rest. Brush the baking tray with oil.
Place these fruits filling puffs on the tray , refrigerate for half hour.
Brush the top of the pastry dough with egg wash
Preheat oven to 200 degrees Celsius
Bake for at at least 20 to 25 mins till the underside turns light brown .
Once cooled dust with icing sugar.
