Apple Pie

An apple pie is a pie in which the main ingredient is apples , sweet flavours and spices. Best Served with whipped cream or ice- cream.



Ingredients

Apple Pie

For the short crust pastry

300 gms plain flour (cold flour) And extra for dusting

2 eggs 100 gms icing sugar 1/4 tsp salt 2 tsp Vanilla essence 130 gms butter , cold butter cut into cubes

Ice cold water only if required


Tips Refrigerate the flour previous night Cut butter into cubes and keep refrigerated.


METHOD sift flour , icing sugar and salt . add the cold cubed butter, use your fingertips to gently work the butter into the flour mixture, until it resembles bread crumbs. Add the eggs , essence mix with your hands until the dough comes together. Wrap it in cling film and let it rest in the fridge for an hour . I'm case u find it difficult to bring together add a splash of ice cold water.

Keep for atleast an hour.


FOR THE FILLING

4 Apples ,peel off the skin and chop 8 tbsp brown caster sugar 1/2 tsp ground ginger 1 tsp spice powder 1/4 cup raisins 12 cashewnuts grind to powder 1tsp soft butter 1 tsp Vanilla essence


METHOD To a pan add the chopped apples , brown caster sugar, essence, spice powder ground ginger, raisins , powered cashewnuts and the butter. Simmer gently till apples are done

Allow to cool.


PROCEDURE

Roll pastry dough round and flat ,less than 1/4 inch, dusting the working surface with flour.

Unroll over a pie dish , push it well all side. Refrigerate for an hour Poke gently with a fork and blind bake for 5 mins for 180 degrees. Allow to cool. Then pack the apple mixture tightly into the pie dish .

For the egg wash ,egg yolk,butter and Little milk. Mix well

Brush the pastry rim. Roll the other piece of dough over the top of the pie or put strips

Pinch edges together. Brush the top of the pie with eggwash.

If rolling the piece of dough over the top of the pie then with a sharp knife make a small incision in the centre of the pie to let steam escape

Bake at 180 degrees till done
