5 days left for Christmas, everyone preparing sweets and cakes. My friends have already made a few. That got me really on the edge, I had to start ,make something at least today.
What better way I thought, to start my Christmas sweets with this Almond Cookies. Inspired by a Middle Eastern Cookie, ' Orange Water Almond Cookies'
Here I have given my own twist to this recipe. Instead of butter I have used clarified butter which is also known as ghee. Since orange water is not available , I have used Rose water and rose essence. Almonds are ground well to a powder and mixed with flour. The clarified butter (ghee) ,egg, sugar are creamed well together ,adding the rose water and rose essence . The almond powder and the flour are mixed well to the creamed wet mixture, then forming into small balls and baking at 180 degrees. It was a total winner , crusty on the top and perfect texture overall.
Almond Cookies Ingredients 200 gms Plain flour (Maida) 125 gms Almonds ,ground to a powder. Sift well, grind the remaining that is left in the strainer once again and sift .
325 gms sugar, powder the sugar, 200 ml clarified butter (ghee) 2 tsp baking powder 1/2 tsp soda bicarbonate 2 tsp Rose water 1 tsp Rose essence
2 tbsp of finely chopped bits of Almonds
Method Take a nice deep bowl, add the ghee and powdered sugar, cream well. Add the egg and mix well. Now add the rose water and rose esssnce and mix well.
Add the soda bicarbonate and baking powder to the almond powder and maida,sift well. Mix the dry ingredients to the wet ingredients and bring it altogether. Now form into small ball and place a small bits of almond on the top.
Refrigerate for half hour. Bake in a preheated oven at 180 degree for 20 to 25 mins till underside is lightly browned.
