A Fruit Mincemeat Pie

A fruit mincemeat pie is a sweet pie of English origin filled with a mixture of dried fruits and spices traditionally served during Christmas season. Its truly the most loved Pie at home. A short crust pastry dough is used for the pie. Short crust pastry ,I believe is the most easiest pastry dough to work with. So do give this a try, you will love it.




Ingredients 1 60 grams dried cranberries 60 grams currants 60 grams raisins 10 grams Ginger crystals 30 grams tutti frutti 30 grams candied peels 100 grams brown sugar 100 ml dark rum 100 ml mixed fruit juice 1/4 tsp spice powder 1/2 tsp cinnamon powder


Method Mix all the above ingredients in a glass bowl cover and refrigerate for 8 hours. Next day remove from the fridge and bring to room temperature.


Short crust pastry Ingredients 125 gms cold plain flour 60 gms cold unsalted butter cut into small cubes Chilled ice water 1 tsp icing sugar

Tips : refrigerate the plain flour for at least 1 hour Place the cold butter in deep freeze for at least 15 /20 mins. Ice cold water

Add icing sugar to the plain flour mix well. Mix in the cubed chilled butter and with your fingertips start breaking down the butter along with the flour bringing it to a bread crumb texture. Now add a tbsp at a time chilled iced water as required to bring the dough together. Approximately 4 tbsp of iced water just to bring the dough together. Wrap in cling film and refrigerate for an hour.

Stage 2 60 gms soft unsalted butter Add the soft unsalted butter to the pan along with the sweet mincemeat. Cook on medium flame for 20 mins till most of the liquid evaporates. Allow to cool.

Stage 3 Sprinkle on your working surface with flour. Roll out the dough thick. Then take a bowl a size bigger than your pie dish and cut out the round shape and roll it to slightly thin about 1/4 inch. Brush your pie mould with oil. Place the rolled dough in the pie mould and even it out well. Using a cookie cutter cut a star shape or any Christmas shapes/symbols. Fill the prepared pie mould with the sweet mincemeat filling. Then place the Christmas cut out on to the filling brush with egg wash. You can also use a muffin tray . Bake in a preheated oven at 180 degrees for 30 mins. Once completely cooled. Dust with icing sugar. Merry Christmas!!.
