Vegetarian Thali

Pinto beans curry, Masala Pulao, Raita, French beans and Carrot stir fry


Served with Papad



Pinto Beans Curry/ Rajma curry

Ingredients

200 gms Pinto beans or Red kidney beans

Soak for 6 hrs and Add just enough water and salt to taste , pressure cook on high for 4 to 5 whistles

Reserve the Beans stock / Water


Ingredients

3 green chillies finely chopped

2 onions finely chopped

3 tomatoes finely chopped

2 tsp ginger garlic paste

1 tbsp finely chopped coriander leaves

Salt to taste

1 tsp lime juice



Spice powder

2 tsp coriander powder

1 tsp cumin powder

1 /2 tsp pepper powder

1/2 tsp garam masala powder

1/2 tsp chaat masala powder

1/4 tsp amchur powder

1/4 tsp turmeric powder



Method


Add oil , once hot saute the finely chopped onions till lightly brown. Next the tomatoes and green chillies. Cook the tomatoes till soft , adding some of the beans stock . Add the spice powders , ginger garlic paste and some reserved Pinto bean stock. Allow to cook for a minute on medium flame.



Add in the cooked Pinto beans , 1/2 cup water if only required , salt if required and finely chopped coriander leaves. Cook for 5 mins on medium flame.


Lastly add the lime juice.



For the Masala Pulao

Ingredients

300 gms basmati rice

Soak for half an hour

Drain out and keep aside.


Ingredients for the green paste


1or 2 green chilli

25 gms coriander leaves with stem

10 gms mint leaves

1 tsp ginger garlic paste



Grind to a paste with very little water



Ingredients



Spice powders


1 tsp chilli powder

1 tsp coriander powder

1/2 tsp pepper powder

1/4 tsp turmeric powder



Ingredients

2 onions finely chopped

3 tomatoes finely chopped

1 tbsp dry Fenugreek leaves

2 bay leaves

Hot water

Salt to taste



Method


Add some ghee/ clarified butter. Saute the onions till lightly brown. Next the tomatoes, Cook till soft .Add the ground green paste and saute for half a minute. Add the spice powders. Add the basmati rice and stir fry gently .Add hot water just 1 inch about the rice. Add salt to taste and dry Fenugreek leaves.


Allow it to come to a boil, lower the flame and cook till done.



Raita

Ingredients

Whisked curd

Kara boondi

Chaat masala

Salt to taste

Very little sugar

Chilli powder

Pepper powder


Mix well together



For french beans and Carrot stir fry


200 gms french beans

Washed well ,cut into just two piece

2 carrots peeled and cut into strips

2 cloves garlic sliced thinly

Salt and pepper to taste



Method


Add very little ghee/ clarified butter. Saute the sliced garlic till lightly brown. Saute the French beans and Carrot strips ,add salt and pepper to taste.


Don't over cook , leaving a slight crunch to the veggies.
