A very simple lightly spiced vegetarian meal.
Ingredients
200 gms tuvar dal /pigeon pea
Soak the dal for 2 hrs.
Wash off and boil till done

1/4 tsp chilli powder
1/4 tsp coriander powder
1/4 tsp cumin powder
1/4 tsp pepper powder
1/2 tsp turmeric powder
1/4 tsp hing

1 Vegetable stock cube
1/4 cup Coriander leaves finely chopped
3 green chillies finely chopped
Few Curry leaves
1/4 tsp Mustard seeds
5 cloves of garlic mashed
1 Onion finely chopped
1 tomato finely chopped
Method
Add the mustard seeds , once it starts to splutter add the curry leaves. Saute the mashed garlic. Add the finely chopped onion and saute till lightly brown. Add the finely chopped tomatoes and cook till soft. Add the spice powders and crushed stock cube. Add in 1 cup water, bring to a boil. Add the boiled dal . And just enough water. Cook for 2 minutes. Lastly add finely chopped coriander leaves.
Bottle gourd green peas and cottage cheese stir fry.

500 gm dudhi chopped into small cubes
100 gms peas
200 gms paneer cut into cubes and lightly shallow fry , remove and keep aside.
2 onions finely chopped
4 cloves garlic mashed
3 chillies finely chopped
1 inch ginger finely chopped
Spice powder
1/2 tsp coriander powder
1/2 tsp garam masala powder
1/2 tsp pepper powder
1/4 tsp turmeric powder
Salt to taste
1/4 cup finely chopped coriander leaves
Method
Add the finely chopped garlic and ginger, saute lightly. Add the finely chopped green chillies and onions , saute till onions turn translucent. Add the chopped bottle gourd ,peas and cook on low flame. Once almost done add the spice powders, salt to taste and mix well. Once done add the paneer. Cook for a minute. Lastly add finely chopped coriander leaves.
