Vegetarian Thali

Lentil Curry/Dal And Snake Gourd Vegetable/Parwal


For the Dal

300 gms Tuvar Dal

Soaked for an hour , washed well and then add enough water, bring it a boil. Then lower the flame and cook till done.


3 spring onions

Finely chop the greens

Finely chop the bulbs

8 cloves of garlic chopped

1 inch ginger finely chopped

3 stalks of celery

Finely chop the stem of the celery

As well as the leaves

1 vegetable stock cube

Salt to taste

1/2 tsp turmeric powder

1/2 tsp pepper powder


Once the oil is hot ,add the ginger garlic and saute till the garlic turns lightly brown. Then add the finely chopped green chillies. Saute next the finely chopped stems of the celery and the bulbs of the onion. Next add the boiled dal , mix well. Crumble in 1 vegetable stock cube. Add in the finely chopped greens of the spring onion and the leaves of the celery.

To this add some water and Cook for 5 mins .

For the Snake Gourd Vegetable


1 kilo snake gourd

Scrape out the skin with a potato peeler or knife.

Remove the seeds. Chop into half ,then slice.

2 onions finely chopped

4 tomatoes finely chopped

2 green chillies finely chopped

1 tbsp East Indian Bottle Masala

1/2 tsp turmeric powder

1/2 cup desiccated coconut

Roast the coconut

Salt to taste

1 tsp ginger garlic paste


Once the oil is hot saute the onions till lightly brown Add next the chopped tomatoes and green chillies . Cook till the tomatoes are soft. Add the turmeric powder, East Indian Bottle Masala and stir fry. Then add 1/2 cup water. Cook for a minute. Next add the sliced snake gourd vegetable and 1/2 cup water . When almost done add ginger garlic paste and Salt to taste.

Once done add the roasted desiccated coconut.
