Tea Time Fruit Cake

Delicious light fruit cake served for tea, what perfect way to enjoy Christmas with this yum fruit cake . Delicious dry fruits of kiwi, Apricots and Cranberries.




Tea Time Fruit Cake

Fruit Cake Ingredients 180 gms dry fruits ( 45 gms each of dried kiwi, Apricots, cranberries) 200ml whisky Sosk the Finely chopped dry fruits in whisky for 3 to 4 hrs. drain and reserve the whisky.

Ingredients 2 250 gms plain flour

250 gms caster sugar 250 gms soft butter 4 eggs 2 tsp Vanilla essence 1 and 1/2 tsp baking powder

Method Sift the plain flour and baking powder together. Take 2 tbs of the flour and keep aside. Use this 2 to tbsp of flour to coat the drained dry fruits before adding to the cake batter.

Ingredients 3 2 tbsp finely chopped dry fruit mix of kiwi, cranberry and apricots. Coat with half tsp plain flour.

1/4 cup whisky for brushing on the cake after the cake is baked.

Method Using a hand electric mixer whisk the butter and sugar to a creamy texture on level 1. Add one egg at a time, whisking the mixture till all eggs are well incorporated. Add the vanilla essence and mix well. Now Add the sifted flour and baking powder mixture , a tbsp at a time and whisk well till all the flour is mixed well. Add the reserved whisky which was drained out from the dry fruits. With the help of a spatula start folding. Add the reserved 2 tbsp flour to the drained dry fruits ,coat well. Add now the dry fruits to the batter and fold gently.

Line a baking dish 8inch x 10 inch with parchment paper. Add the batter to this dish sprinkle in some finely chopped mixed dry fruits. bake in a preheated oven at 180 degrees. for 40 to 45 mins approximately or till done.

Once the cake is baked and still warm, poke with a toothpick gently and brush the cake with the 1/4 cup whisky.

( I used a loaf tin and rest of the batter made cupcakes)
