Stuffed Crust Pizza

A delicious pizza stuffed with cheese . I have used a basic pizza sauce and for the toppings , used chicken , jalapenos , dried herbs

INGREDIENTS For the pizza dough 600 gms maida or self raising flour 15 gms fresh yeast 2 tbsp sugar 400 ml water lukewarm Salt to taste For the crust Amul mozzarella cheese

METHOD Add salt to the maida keep aside Mix yeast to 2tbsp sugar and mix well. Add the luke warm water and stir keep aside for 15 to 20 mins Add this yeast mixture to the flour and knead gently for 10 mins .add extra lukewarm water if required. Spread olive oil to a dish and place the dough in it and cover with a warm muslin cloth& place in warm place for an hour or 2 till risen. Punch the dough and roll then cut into desired size and roll into round pizza shape . Use diced Amul mozzarella cheese to create a ring around the outside edge of the pizza base, leaving 1/2cm gap between the edge. Brush a little water inside the mozzarella ring then fold over the outside edge to enclose the mozzarella and create a stuffed crust. Press firmly to stick the dough in place. Keep for another 1/2hour for the dough to rise .then poke with fork all round except the crust. Spread pizza sauce then grated mozzarella cheese. Add the cooked chicken pieces or other toppings of your choice, jalapenos,olives & red chilli flakes. Sprinkle dry Oregano and Basil on the top. Bake at 200 degrees for 10 to 15 mins or till done. TIPS 1. LUKE WARM WATER FOR YEAST 2.MIX ALL THE INGREDIENTS IN A DEEP DISH FIRST AND FOLD IN WITH A SPATULA 3. A CLEAN KITCHEN SURFACE TO BE OILED 4. PLACE THE MIXED FLOUR MIXTURE ONTO THE OILED SURFACE 5. BRING THE DOUGH TOGETHER ADDING THE EXTRA 50 ML WATER 6. FOLLOW STRETCH AND FOLD METHOD FOR KNEADING THE DOUGH 7 TOTAL KNEADING TIME WITH THE ABOVE METHOD 20MINS 8 MAKE A ROUND BALL BY FOLDING DOUGH INWARDS 9.BRUSH A DISH WITH OIL 10 BRUSH THE DOUGH WITH OIL AND PLACE IN THE VESSEL 11. HEAT UP OVEN TO ROOM TEMPERATURE SWITCH OFF THEN 12 PLACE THE VESSEL WITH THE DOUGH INSIDE. KEEP FOR 2 HRS
