Stir Fry Black Eyed Beans

A simple, wholesome stir fry that is light, nutritious and full of fresh flavours. Perfect as a side dish or even a light meal on its own.
Ingredients
For Cooking the Beans
300 grams black eyed beans
Water (just enough to cook)
For the Stir Fry
1 bunch spring onions (greens chopped, bulbs sliced)
1 bell pepper (red, yellow or green), chopped ( optional)
3–4 green chillies, finely chopped
½ tsp freshly ground cumin powder
Pepper powder as per taste
¼ tsp turmeric powder
Salt to taste
Juice of ½ lime
Method
Cooking the Beans :
Soak the black eyed beans for 6 hours or overnight.
Wash well and bring to a boil with sufficient water.
Once it begins to boil, remove the foam that rises to the top.
Cook on low flame until done — soft but not mushy.
Drain and rinse once under water. Keep aside.
Preparing the Stir Fry :
Lightly sauté the sliced onion bulbs and most of the chopped spring onion greens (reserve a little for garnish).
Add the chopped green chillies and sauté briefly.
Add cumin powder, pepper powder, turmeric and salt. Stir well.
Add the cooked black eyed beans and gently toss to coat with the spices.
Add the chopped bell peppers and stir lightly (keep them slightly crunchy).
Finish with a squeeze of fresh lime juice and the reserved spring onion greens.
Serve warm.
Serving Suggestion
Delicious as it is, or pairs beautifully with a lovely fried chicken steak for a balanced meal.
