A quick, healthy, and satisfying breakfast made with simple ingredients from your kitchen. These soft uttapams are flavourful, easy to prepare, and perfect for busy mornings.
Ingredients:
1½ cups wheat flour
½ cup nachni rawa or semolina (rawa)
5–6 green chillies, finely chopped
1 tsp coriander powder
½ tsp cumin powder
Salt to taste
A generous amount of finely chopped coriander leaves
Water (to make a smooth, pourable batter)
1 large tomato, finely chopped
1 onion, finely chopped
Method:
Sift the wheat flour into a bowl. Add nachni rawa (or semolina), salt, coriander powder, and cumin powder. Mix well.
Gradually add water and whisk to form a smooth batter. The consistency should be pourable — not too thick, not too thin.
Add the chopped onions, tomatoes, green chillies, and coriander leaves. Mix well and adjust the consistency if needed.
Heat a non-stick pan and lightly brush it with clarified butter (ghee).
Pour a ladleful of batter and spread gently to form a thick uttapam.
Cover and cook on medium heat.
Drizzle a little ghee on top, flip, and cook the other side for a minute until done.
Serve hot with chutney, ketchup, or enjoy it just as it is.
