Makki Pancakes (Cornmeal Pancakes)

Savoury Cornmeal Pancakes


These savoury cornmeal pancakes are a wholesome twist to the regular breakfast. Made with makki atta, a touch of wheat flour, fresh coriander, and simple spices, they turn out light yet filling. Perfectly spiced and golden crisp, they make a comforting meal for breakfast.


Ingredients (makes 6 medium pancakes)



1 cup makki atta (cornmeal flour)


( 200 ml cup)



⅓ cup wheat flour



A generous amount of finely chopped fresh coriander leaves



4 green chillies, finely chopped



1 tsp coriander powder



½ tsp cumin powder



¼ tsp pepper powder



Salt to taste



2 medium size onions finely chopped



Water as required (to make a pourable batter) , I have used almost 500 ml of water. Gradually add water to prepare the batter of your desired consistency



Oil or ghee, for cooking



Method



1. In a mixing bowl, combine makki atta and wheat flour. Mix in the finely chopped coriander leaves, finely chopped onions, green chillies, and all the spice powders with salt.



2. Gradually add water to make a smooth, pourable batter. The consistency should be slightly thicker than dosa batter.



3. Heat a non-stick tawa or skillet. Grease lightly with oil/ghee.



4. Pour a ladleful of batter and spread gently into a round pancake.



5. Drizzle a few drops of oil / ghee around the edges and cook on medium flame until golden spots appear. Flip and cook the other side.



6. Repeat with the remaining batter.



Serving Suggestion


Serve hot with green chutney, curd, or ketchup .They taste great for breakfast or a light evening snack.

The combination of makki atta, wheat flour, sugar, and warm spices makes them wonderfully aromatic, while an egg adds a delicate richness. Drizzle with honey or chocolate,



Ingredients



1 cup makki atta (cornmeal flour)



⅓ cup wheat flour



1 egg, well beaten



1 tbsp or 2 tbsp sugar (adjust to taste)



½ tsp spice mix (cinnamon + nutmeg)


Or spice mix powder





A pinch of salt



Water as required (to make a pourable batter) , gradually add water to prepare the batter of your desired consistency



Butter or ghee, for cooking



Method



1. In a bowl, whisk together beaten egg ,sugar, spice mix and salt.



2. Add the makki atta , wheat flour and gradually mix in water until you get a smooth, pourable batter (not too runny).



3. Heat a non-stick pan, grease lightly with butter/ghee.



4. Pour small ladles of batter to make pancakes. Cook until bubbles appear, flip, and cook the other side until golden.



5. Repeat for the rest of the batter.



Serving Suggestions



Drizzle with honey or maple syrup.



Add chopped fruits like banana, apple, or berries.



Peanut butter spread or chocolate spread will make kids love it even more.
