Dosa is a savory crepe , a typical South Indian Cuisine made from fermented batter of lentils and rice. The rice and lentils are soaked for at least 5 hrs . then ground into a paste . Typically served with chutney and sambhar.
Dosa with Green Coriander chutney and Onion Chutney
Dosa Batter
Ingredients
3 cups broken basmati rice
1 cup Urad dal
1/2 cup channa dal
Method
wash well then soak each separately overnight or soak for 5 to 6 hrs.
Drain the water the next morning.
and first grind the urad dal and channa dal together with just enough water.
then grind the rice with just enough water.
Mix both the batters together well.
Keep aside in a warm place for at least 6 hours.
For the coriander coconut chutney
Ingredients
1/4 cup coriander leaves
1cup desiccated coconut
1tsp ginger garlic paste
1tsp lemon juice
1/2 tsp cumin powder
1/2 tsp pepper powder
3 green chillies or according to taste
salt to taste
and 1/2 tsp sugar
Method
Grind all the above ingredients with some amount of water .
For the onion chutney
2 Onions
3 Kashmiri chillies
1 cup desiccated coconut
a little bit of tamarind
1tbsp channa dal
1tspb urad dal
1/4 tsp turmeric powder
salt to taste
Method
Stir fry the onions till lightly browned. Then stir fry the channa dal and urad dal . Grind the stir fried onions and the channa dal , urad dal with rest of the ingredients ,adding some amount of water.
Method
Heat up a nonstick pan.
Spoon some amount of the batter on the pan and spread in a circular motion all over the pan
Allow to cook on medium heat.
brush the edges with oil.
Cook till the undersides are lightly brown.
