Shredded Spicy Chicken With Baked Nachos And Salsa

Spicy Shredded chicken gravy paired with crispy nachos and cheese. A mouthwatering dish , sure to tantalize your taste buds. Serve it as a snack or as an appetizer .



Mexican Salsa


Ingredients

use 12 tomatoes to make a puree

8 to 10 cloves of garlic made into a paste

1/2 teaspoon cumin powder

1/2 teaspoon chilli powder or according to taste

2 onions

2 green chillies

1/4 teaspoon pepper powder

salt to taste

tomato ketchup for thickness and balancing of taste

1 teaspoon vinegar

1 tablespoon dried oregano


Method

Heat up a pot with some amount of oil and a tablespoon of butter. Saute the finely chopped onions till they turn translucent along with finely chopped green chillies and the garlic paste. Add the prepared tomato puree along with some amount of water. Incorporate the chilli powder, cumin powder and pepper powder or adjust to your liking for flavour . Next, add the 1 tablespoon of dried oregano and salt to taste. Mix everything well. Add a tablespoon or 2 of tomato ketchup and 1 tsp of vinegar. Let it simmer for at least 20 to 30 minutes on low flame ,occasionally stirring.



Nachos With Salsa


For the Nachos

2 cups of corn meal flour {Makai atta}

1 cup plain flour { self raising flour}

salt to your liking

1 tablespoon of dried oregano

1 teaspoon of carom seeds/ ajwain

1 tablespoon of oil

add water as required


Method


Knead all the above mentioned ingredients to a smooth soft dough. Brush the kneaded dough with oil .Cover it with a damp muslin cloth and let it rest for 1 hour.


Roll the dough into round thin chapatis .Poke all over the thin rolled chapatis with a help of a fork. Roast them on the pan .


After roasting all ,cut them into triangle shapes using a clean kitchen scissor.


Place baking sheet on a baking tray. Brush it with oil. Arrange the triangle shape nachos on the tray. Brush the top part of the nachos with oil . Bake in preheated oven at 200 degrees till crisp.



Spicy Shredded Chicken


Take the 400 grams chicken pieces and add 1/4 teaspoon cumin powder, 1/4 teaspoon chilli powder , 1/4 teaspoon pepper powder and a little amount of salt.


Add some water , 1 big onion chopped in half , 3 to 4 stalks of coriander leaves and 6 big cloves or 8 small cloves of garlic.


Boil the chicken with all the above ingredients until done.


Once cooled , remove the onions , coriander stalks and cloves of garlic . Grind these with with 3 to 4 kashmiri chillies , 1 teaspoon cumin seeds ,1/2 teaspoon pepper corns and 1 teaspoon vinegar to a paste


Shred the chicken and set aside.


Stir fry 3 finely chopped onions with 1 tablespoon of chopped jalapeno chillies. Add 1 peeled tomato chopped. Once soft, add 4 serving spoons of tomato puree . Add 1 tablespoon of dried oregano . Add the ground paste and stir well. Add some of the stock of the boiled chicken. Cook for 5 minutes. Add the shredded chicken pieces. Cook for another 10 minutes on low flame.


Using a baking dish .Add the shredded chicken gravy ,2 serving spoons of salsa and sprinkle in lots of cheese.


Bake at 180 degrees for 15 to 20 minutes .


Serve this shredded chicken gravy with nachos and cheese.
