Shami or Shaami kebabs is prepared with minced meat , generally beef , also with chicken , mutton or lamb along with ground chickpeas { chana dal} , spices and eggs for binding.
Ingredients
500 gms mince ( chicken or mutton)
200 gms chana dal ( soak previous night)
1 tbsp ginger garlic paste
4 green chilies finely chopped
4 medium size onions finely chopped and lightly stir fried
1 tbsp chili powder or according to taste
1 tbsp coriander powder
1/2 tbsp cumin powder
1/2 tbsp garam masala powder
1/2 tbsp chaat masala
1 cup finely chopped coriander leaves
1/2 cup finely chopped mint leaves
Salt to taste
1 egg
Method
Boil the mince with channa dal, little bit of turmeric powder, pepper powder and salt to taste ( do not add too much water to boil the mixture) once done allow to cool.
Then grind the mince mixture.
Once cooled mix the rest of the above ingredients well.
Form into round shapes and shallow fry.
Carefully turn on either sides while frying .
